Ingredients

  • For the Rice:

    • 2 cups basmati rice
    • 4 cups water or chicken broth
    • 1 teaspoon salt
  • For the Meat (optional):

    • 1 pound chicken, beef, or lamb (cut into pieces)
    • 1 onion, finely chopped
    • 2-3 garlic cloves, minced
    • 1 tablespoon vegetable oil or ghee
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1 teaspoon turmeric
    • Salt and pepper to taste
  • Vegetables (optional):

    • 1 carrot, grated or sliced
    • 1 cup frozen peas
    • Dried fruits (like raisins or apricots) for garnish

Instructions

  1. Prepare the Rice:

    • Rinse the basmati rice under cold water until the water runs clear. Soak it in water for about 30 minutes, then drain.
  2. Cook the Meat:

    • In a large pot, heat the oil over medium heat. Add the chopped onion and sauté until translucent.
    • Add the garlic and cook for another minute.
    • Add the meat and cook until browned. Stir in the spices (cumin, coriander, turmeric), salt, and pepper. Cook for a few more minutes until fragrant.
  3. Add the Rice:

    • Add the drained rice to the pot, gently stirring to combine with the meat and spices.
    • Pour in the water or broth, bringing it to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and liquid is absorbed.
  4. Add Vegetables:

    • If using, stir in the grated carrot and peas during the last 5 minutes of cooking.
  5. Fluff and Serve:

    • Remove from heat and let it sit, covered, for another 10 minutes. Fluff the rice with a fork and garnish with dried fruits if desired.
