Ingredients
For the Rice:
- 2 cups basmati rice
- 4 cups water or chicken broth
- 1 teaspoon salt
For the Meat (optional):
- 1 pound chicken, beef, or lamb (cut into pieces)
- 1 onion, finely chopped
- 2-3 garlic cloves, minced
- 1 tablespoon vegetable oil or ghee
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- Salt and pepper to taste
Vegetables (optional):
- 1 carrot, grated or sliced
- 1 cup frozen peas
- Dried fruits (like raisins or apricots) for garnish
Instructions
Prepare the Rice:
- Rinse the basmati rice under cold water until the water runs clear. Soak it in water for about 30 minutes, then drain.
Cook the Meat:
- In a large pot, heat the oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the garlic and cook for another minute.
- Add the meat and cook until browned. Stir in the spices (cumin, coriander, turmeric), salt, and pepper. Cook for a few more minutes until fragrant.
Add the Rice:
- Add the drained rice to the pot, gently stirring to combine with the meat and spices.
- Pour in the water or broth, bringing it to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and liquid is absorbed.
Add Vegetables:
- If using, stir in the grated carrot and peas during the last 5 minutes of cooking.
Fluff and Serve:
- Remove from heat and let it sit, covered, for another 10 minutes. Fluff the rice with a fork and garnish with dried fruits if desired.
